      history of American cuisine, cooking methods and food customs over an
      open-hearth fire. Each month this Winter, we explore a different period
      of American life through the recipes and cooking techniques of 17th, 18th
      and 19th centuries. This month, we are preparing, sampling and sending
      home a dish from the 17th century. Our morning session is intended for
